Ingredients: nacho chips, lg. can of cream of mushroom soup, can of Rotel tomatoes, small can of kidney beans, rotisserie chicken deboned and cut into chunks, shredded cheese
Crush half a bag of nacho chips. Spread in bottom of 9X13 pan.
Sprinkle chunks of chicken and kidney beans over chips.
Mix in bowl: large can of cream of mushroom soup and a can of Rotel tomatoes. Pour mixture over chicken and beans.
Toss mixture until chips are well moistened.
Sprinkle cheese over all.
Bake at 350 for 25 minutes or until cheese is melted and casserole is heated through.
Serve with a dollop of sour cream.
I love this recipe because you can change so many things to suit your tastes: different flavor of chips, different soup, hot or mild Rotel tomatoes, different beans, different cheese.
It's one of my favorites!
I buy the rotisserie chicken already baked from the store. My store sells them cold and marked down, so they aren't too expensive.
