Ingredients

2 Tablespoons - Olive oil

1 tablespoon - All purpose flour

1 lb Can 16 oz can - Chopped Diced Tomatoes *Drained*

1 Medium - Diced Sweet Red Onion

1/2 teaspoon - Garlic Powder

1/2 teaspoon - Cilantro * powdered or diced*

1 Tablespoon - Chili Powder

4 Cups - Low Sodium Beef Bouilion *or broth* Make sure it's heated when adding

1/2 Pound - Shredded Sharp Cheddar Cheese * Fat Free*
Directions
- Heat oil in large saucepan. Stir in flour.
- Add in Tomatoes, garlic powder, onions, cilantro and chili powder. Mix well.
- Slowly add in Beef bouilion, bring to a boil. Reduce heat , cover and simmer 30 minutes. Stir frequently.
- Add Cheese and stir until cheese melts. Serve Immediately.
Serves 6-8 Hungry people :-)

Notes: Great with homemade croutons or simple stone-ground wheat crackers, a small mexican salad and any fresh fruit for dessert.
