Ingredients
  • 1/4 cup - all purpose flour
  • 1/2 teaspoon - baking powder
  • 4 ounces - (1 tiny can) canned green chiles - diced
  • 1 cup - low-fat cottage cheese
  • 1/2 pound - Monterey Jack cheese - shredded
  • 1 and 1/2 pounds - cooked turkey - shredded
  • - salsa - optional
  • - sour cream - optional
  • 8 - large eggs
Directions

Preheat oven to 375 degrees. Prepare a 9-inch baking dish with a generous coating of cooking spray.

Beat the eggs in a mixing bowl until well blended. Add the flour, baking powder, and salt and mix well. Stir in the cottage cheese, about 3/4 of the Jack cheese, all of the turkey and the chiles.

Pour into a prepared baking dish and bake 30 to 35 minutes until center is set.

Sprinkle with remaining cheese and cook about 3 more minutes - until cheese starts to melt;

Let stand 5 minutes before serving. Top each with sour cream and salsa if desired.

Hearty and spicy. It's great to serve them with tortillas so guest can create little burritos if they like. Enjoy!
