Mozzarella Salmon Loaf
2 eggs
1 cup rolled oats
2 cans salmon (7.5 oz)
1 cup mozzarella cheese, grated
1/4 cup onion, chopped
1 stalk celery, chopped
1 large carrot, grated
2 T. lemon juice
In a large bowl, beat eggs. Stir in rolled oats, salmon, cheese, onion, celery, carrot and lemon juice until well combined.
Place mixture into lightly greased 9 x 5 inch loaf pan. Bake in preheated 350 F oven for about 35 minutes.
