M's Oven Fried Chicken

Ingredients
  • 4-6 - bone in skin on chicken thighs
  • 2-4 cups - buttermilk
  • 2 cups - flour (all purpose or self rising)
  • 1 1/4 cups - corn meal
  • 1 teaspoon - paprika
  • 1 teaspoon - garlic powder
  • 1 teaspoon - onion powder
  • 1/2 teaspoon - ground thyme
  • 3/4 teaspoon - salt
  • 1/2 teaspoon - black pepper
  • - Cooking Spray
Directions
1.         In large re-sealable plastic food storage bag, mix buttermilk, and chicken. Seal bag; turn bag several times to coat chicken. Refrigerate at least 1 hour or overnight.
 
2.         Heat oven to 425 F. Spray 15x10x1 inch pan with cooking spray. In 1 shallow dish, in shallow bowl, mix breading ingredients . Remove chicken pieces from buttermilk; season with same seasonings as in breading ingredients.   Dip chicken in breading, turning to coat completely; shaking off excess flour. Place chicken, bone side down (skin side up), on a baking rack placed over a baking sheet. Let set for about 15 minutes before baking. Spray tops of thighs lightly with cooking spray. 
 
3.         Bake 35 to 40 minutes or until juice of chicken is clear when thickest piece is cut to bone (170 F. for breasts; 180 for legs and thighs)

Notes

  I bake these on  a cake cooling rack placed over a baking sheet to let the grease drip off.  spray both with cooking spray before you use them

What a brilliant idea, to bake them over a baking sheet on a cooling rack! I never would have dreamed of that!!! Kudos to you!
