Sift 1/1/2 c. flour, 1 tsp. salt, and 1 tsp. soda in a medium-sized mixing bowl; add 3 c. oatmeal (regular or quick, but not instant), 1/2 c. chopped walnuts (or more), and 1 c. chocolate chips (or less); set aside.
In a large mixing bowl cream 1 c. butter or margarine; add 2 c. brown sugar (or less) and cream together.
Add 2 beaten eggs and 1 tsp. vanilla and mix well.
Add dry mixture and mix well.
Cover the mixing bowl and chill.
Drop from a spoon onto ungreased cookie sheets.
Bake at 350 F. about 10 min. (do not overbake).
Makes about 5 dozen.
This is a family variant on a recipe called Oatmeal Crispies, where the cookie dough is formed into rolls, wrapped in waxed paper to chill, and then sliced 1/2 inch thick onto the ungreased cookie sheet. Another variation would be using raisins instead of chocolate chips (separate the raisins from each other and get them coated with the flour mixture so they won't gum all together). Once at a friend's special request I used chocolate chips plus coconut plus raisins plus nuts, which was definitely over the top.
