Cream together butter and brown & white sugars until fluffy (at least 3 min.). Stir in vanilla; then eggs, one at a time, beating after each addition.
Sift together flour, salt and baking soda. Add to creamed mixture. Stir in rolled oats and coconut. Drop by teaspoonfuls about 2” apart on well-greased baking sheet. Bake at 350° 10-15 minutes. Cool cookies on racks. Make 14 doz.
NOTE: You can omit the 1 ½ c coconut and divide dough into thirds. Add 1/3 c coconut to one part, 1/3 c raisins to second part and 1/3 c chopped walnuts to the third.
