1/2 cup shortening
1 cup brown sugar
1 egg
2 tablespoons water
1/2 teaspoon vanilla
1/4 teaspoon almond extract
1 1/4 cups flour
1 cup rolled (quick) oats
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cups chopped raisins ( i did not chop mine)
1/4 cup chopped nuts (i used 1/2 cup chopped nuts)
Cream shortening and sugar together.
Add egg, water and flavoring.
Beat until fluffy.
Sift flour.
Measure and add salt and soda.
Sift again.
Add oats to dry ingredients.
Add dry ingredients to creamed mixture and stir until well blended.
Add finely chopped nuts and raisins.
Shape into rolls 21/2 inches in diameter and chill overnight in refrigerator.
Slice 1/8 inch tick and place 1 inch apart on greased baking sheet.
Bake at 375° for 8 to 10 minutes.
Makes 3 dozen cookies.
