Title:

Open Faced Enchiladas

Dish: Hot & Spicy
Dish Type: Beef
Cooking Method: Stove Top
Difficulty: 1 / 10
Servings: 8
Prep Time: 5 minutes
Cook Time: 15 minutes

Ingredients
  • 1 - chopped onion
  • 1/2 tsp - garlic powder
  • 1 tsp - chili powder
  • 1 tsp - black pepper
  • to taste - salt
  • 1 4 oz can - chopped green chilis
  • 2 10 oz cans - enchilada sauce (one medium, one mild)
  • 3 16 oz cans - chili beans in sauce
  • 16 - corn tortillas
  • - shredded cheddar cheese
  • 1 lb - extra lean hamburger
Directions

Fry hamburger in large pan with salt, pepper, chili powder, garlic powder until well browned.  Add chopped onion and cook another minute or so.  Add green chilis, enchilada sauce and beans and heat through.

Fry corn tortillas slightly, removing before becoming too crisp, and drain on paper towels.

Place a tortilla on plate, cover in chili mixture and shredded cheese, place second tortilla on and cover in more chili mixture and cheese and top with shredded lettuce.

Serve with salsa and chips.

Notes

This dish is a family favorite.  Great for group gatherings.

I don't measure the seasonings; just sprinkle them on til it looks right.

It's quick, easy, flavorful, and freezes well.

For people that don't like it quite so spicey mild enchilada sauce can be used and less green chilis.
