Preheat pancake griddle or pan on medium heat. I used a cast iron griddle-adjust temperature according to the kind of pan you are using.
Cut the apple into chunks. (with a vitamix you can cut it in fourths, I'm not sure about a regular blender)
Put everything in your blender or vita-mix.
Blend on low and increase speed gradually until the ingredients are well blended.
Spray griddle with oil.
Ladel pancake batter onto the griddle and cook until bubbles form and pop. Flip and cook until other side is done. (I poke it with a fork or knife to check the middles.)
I made 6 medium sized pancakes with this recipe.
These are fluffyish pancakes. I like them with a little peanut butter and real maple syrup.
I named these Pancakes for Penny because as I was creating them for breakfast this very morning, trying to eat low cholesterol, I got a phone call telling me that my friend Penny had just passed away. She was a heart patient. In honor of her and to encourage eating for a healthy heart, I dedicate this recipe to her. May God be with her until we meet again.
