Pat's Yummy Stuffed Acorn Squash

  • 1/3 cup - chopped cranberries
  • 1 - medium apple-chopped
  • 1 T. - melted butter
  • 2 T. - maple syrup
  • 1/2 t. - cinnamon
  • dash - nutmeg
  • - several pecan halves for garnish
  • Cut the stem (and opposite end) from the squash.  Scoop out seeds and pulp. 
  • Spray a baking sheet with Pam or similar product, and place the squash cut side down on the baking sheet.
  • Bake at 350 degrees for @35 minutes.
  • Remove from pan.
  • Combine the apples, cranberries, and remaining ingredients in a small bowl.  Stir.  Place the apple/cranberry mixture in the cavity of the acorn squash.   Return to the baking sheet and continue baking for another 25 minutes or until the squash is tender.
