Cut the stem (and opposite end) from the squash. Scoop out seeds and pulp.
Spray a baking sheet with Pam or similar product, and place the squash cut side down on the baking sheet.
Bake at 350 degrees for @35 minutes.
Remove from pan.
Combine the apples, cranberries, and remaining ingredients in a small bowl. Stir. Place the apple/cranberry mixture in the cavity of the acorn squash. Return to the baking sheet and continue baking for another 25 minutes or until the squash is tender.
