I found this recipe and tried it today, I had no idea it was this quick or easy, wow. Peanut Brittle 1 1/2 cups dry roasted peanuts 1 cup of sugar 1/2 cup light corn syrup pinch of salt 1 tablespoon of butter 1 teaspoon of vanilla extract 1 teaspoon baking soda Directions: grease a cookie sheet and set aside. In a glass microwave safe bowl ( I used my pamper chef 2 qt bowl with handle because the bowl gets so boiling hot you can't hold it) combine peanuts, sugar, corn syrup, and salt. Cook in microwave for 6 to 7 minutes. ( I did 6); mixture should be bubbly and peanuts browned. Stir in butter and vanilla; cook 2 to 3 minutes longer (I did 2) Quickly stir in baking soda, just until mixture is foamy. Poor immediately onto greased cookie sheet. Do it quick, it sets up very fast. Let cool until room temperature, break into pieces and store in air tight container. Let bowl soak with hot soapy water and it cleans up easy. I'm going to line the cookie sheet with wax paper next time to see if helps with the cleaning of the greasy cookie sheet. I've never made brittle before, who knew it was so easy, wow.
