Cream shortening and sugars until fluffy. Add eggs and beat well. Blend in peanut butter. Sift together flour, salt, and baking soda, stir into peanut butter mixture. Stir in oats. Roll dough into walnut size balls, place on ungreased cookie sheets. Press with tines of a fork to make criss-cross pattern on each. (May need to dip fork into granulated sugar or flour to keep from sticking to cookies.) Bake at 350 degrees for about 12 minutes. Makes approximately 6 dozen cookies.
I use a small scoop instead of rolling into balls. It is much faster! We have also made larger cookies to make ice cream sandwiches, put Hershey's Miniatures between two just out of the oven cookies, and microwaved the cookies for a few seconds to reheat them. My mother
