Poor Man's Pot Roast ( foil dinner)

Ingredients
  • 1-2 lbs - ground beef, chuck, sirloin. ( Your choice)
  • 8-12 small - peeled and halfed potatoes
  • 1 or 2 large - onions peeled and cut into rings
  • 1 bag - peeled carrots ( or bag of already peeled baby carrots)
  • - Enough water to cover everything ( see Notes)
Directions

Preheat oven 450 degrees

Take ground meat and form desired number and sized hamburger patties. Remember they will shrink during cooking. Try to keep all the sizes uniform so they will cook evenly.

Place in the bottom of a roasting pan. ( I use my Pampered Chef stone roasting pan, It is pretty deep. You need to have enough room for all the veggies and water).

Layer on top all Your prepared vegetables. Try to keep the size of Your potatoes and carrots the same for even cooking. I usually layer in this order: Meat, onions, potatoes and carrots.

Add enough Water (or broth) to cover everything. Cover roaster with foil and crimp edges to seal.

Bake for 50 mins. Check once in a while to ensure that all the water hasn't evaporated. Around 45 mins use the tip of a sharp knife to check for doneness of carrots and potatoes. Cook longer if needed.


Notes

If You use a cheaper or lower fat ground meat You may want to substitute the water for low sodium/low fat beef broth to add flavor.
