Ingredients
  • 3.25 cups - all-purpose flour
  • 2 teaspoons - baking soda
  • 1 teaspoon - ground nutmeg
  • 2 cups - pumpkin puree - can use out of a can
  • 1 cup - vegetable oil
  • 1/2 cup - chopped nuts (optional)
  • 1 1/2 teaspoon - salt
  • 1 teaspoon - ground cinnamon
  • 3 cups - white sugar
  • 2/3 cup - water
  • 4 - eggs (beaten)
Directions
  1. Grease and flour three 7 x 3 inch pans. (I like the Pam spray with flour in it.)
  2. Preheat oven to 350 degrees.  Preheating is very important when making breads and cakes, so don't skip this step.
  3. Measure flour, sugar, baking soda, salt, and spices into a large bowl. Stir to blend. Add pumpkin, water, vegetable oil, eggs, and nuts. Beat until well combined. Do not beat until perfectly smooth, though, as this makes for tough pumpkin bread! 
  4. Pour batter into prepared pans.
  5. Bake for 1 hour.  Ovens will vary, so stick a toothpick into the center of a loaf and when it comes out clean, it's done.

 

This bread also freezes well and makes wonderful presents!
