Ingredients
  • 2 lbs - Red Snapper Fillets
  • 1 Tablespoon - Lime Juice
  • 3 1/2 Tablespoon(s) - Olive Oil
  • 1 small 1/2 cup - Sweet red Onion diced fine
  • 1 Large Clove - fresh garlic *minced fine*
  • 1 jar 8 oz - Picante Sauce
  • 1 can 8 oz - Tomato Sauce * I love the Italian one*
  • 1/2 leaf - Bay Leaf (just a 1/2) of it
  • 1/8 teaspoon - Oregano
  • 6 pimento stuffed olives - Cut them in half
  • 1 Tablespoon - *Capers* Optional
  • 2 tablespoons - Jalapeno Peppers *diced fine*
  • Slight dash - Fresh ground pepper
Directions
  1.  Place snapper fillets in 13X9X2 inch pan. Prick fork marks in fillets. Sprinkle with Lime juice.. Cover and refrigerate 2 hours. Preheat over to 350 degrees.
  2. In a large saucepan saute the onion and garlic in olive oil till they are soft. Add picante sauce, tomato sauce, bay leaf, oregano, olives and capers *if desired* jalapenos and slight dash of fresh ground pepper. Cook and stir over medium heat until slightly reduced (10 minutes).
  3. Pour sauce over fish fillets. Coat well. Bake at 350 *degrees for 30 minutes turning only once (15 minutes).
  4.  Serve with Chili corn bread and Mashed potatos. Fresh Apple slices add wonder and taste to the meal!
