1 tablespoon Better Than Bouillon Vegetable Base
1 cup lentils, rinsed
2 carrots, cut into coins and quartered
2 potatoes, peeled and cut in dice
1 chopped onion
1 garlic clove
1 can tomatoes, undrained
1 can any type of beans, rinsed
oregano
salt and pepper, optional
Put Better Than Bouillon and lentils in 2 quarts of water, and start to boil. Chop carrots and potatoes and add to water. Saute onion and garlic in a little olive oil till softened, and add to water. Open cans of tomatos and beans and add to soup. Sprinkle in as much oregano (or other seasoning) as you like. Add salt and pepper if you like. When it comes to a boil, lower the heat and simmer till the carrots are soft (they will cook faster if you cut them small).
