This wonderful cookbook features a fascinating range of 120 imaginative rice and risotto recipes. The chapters include soups and salads; entrees and accompaniments; risottos; famous rice dishes; and desserts, cakes, and pastries. All of the recipes are easy to follow with clear step-by-step instructions. Each recipe has a full color photo.

FYI There are many kinds of rice. Long-grain white or brown rice; Basmati rice, sometimes called the Champagne or king of rice is from India and Pakstan and has a distinctive perfume; Italian risotto rice; Spanish calaspara and la bomba rice; pudding rice -grown in North and South Carolina; jasmine rice from Thailand; Black sweet or glutinous rice; Camargue red rice from south France and wild rice.
