Ingredients
- 2 boxes of Chicken Rice a Roni (fix according to box instructions)
- 1 jar marinated artichoke hearts (drain and save oil)
- 1 bell pepper
- 1 10z box of frozen peas
- 1 bunch of green onions
- ½ to 2/3 cup black olives (or Spanish olives if you prefer)
- 1 bunch of broccoli floweret’s
- 1-can water chestnuts
- 2 cans of chicken meat or 3 cooked and diced breast of chicken
- Dressing:
- 2/3 to 1 cup of mayonnaise
- 1 TBSP lemon juice
- ¼ - ½ tsp dry mustard powder
- Oil from artichoke hearts
- ¼ - ½ tsp curry powder
Directions
Dice up all ingredients and mix well. Mix all of dressing ingredients well. Add to salad and mix well. Chill for at least 1 hour then serve.
