Ingredients
  • 1/4 cup - butter
  • 1 cup - grated cheddar cheese of choice
  • 1/4 cup - milk
  • 1/4 tsp. - salt
  • dash - Tabasco
  • dash - Paprika
  • dash - Cayenne
  • 3/4 cup - sifted all-purpose flour
  • 1-1/2 cups - fine soft bread crumbs
  • Topping - Coarse salt, grated Parmesan cheese, poppy seeds or toasted sesame seeds
Directions

Work butter until creamy, then blend in cheese, milk, salt, Tabasco, paprika and cayenne.

 

Add flour and bread crumbs, combining thoroughly.

 

Divide mixture in half and refrigerate for several hours or overnight.

 

Roll one portion of the dough at a time, between 2 sheets of wax paper until quite thin.

 

Work quickly because this very rich pastry will readily soften. (Rechill if this happens until firm enough to work) With a pastry wheel or knife cut pastry into strips about 5 inches long and ¾ inch wide.

 

Place on a cookie sheet, sprinkle with any of the suggested toppings or none, and bake in a preheated 350 degree oven for 12-15 minutes or until delicately browned.

 

These straws are an old southern recipe that I grew up with. We make at least 4 recipes at a time because they disappear so fast. Nice as a snack, better during the holidays for visitors and gatherings and make a great food gift.
