Rueben Hot Dish

Ingredients
  • 2 cups - Milk
  • 1/4 cup - finely chopped onion
  • 1 pound chopped - deli corned beef
  • 3 Tbsp. - yellow mustard
  • 1 can 16 oz. - Sauerkraut
  • 1 8 oz. - bag of Egg noodles (UNCOOKED)
  • 2 cups - shredded Swiss Cheese
  • 2 Tbsp. - butter, melted
  • 5 slices - cubed Rye Bread
  • 2 cans - Cream of Mushroom Soup
Directions

1. Preheat oven to 350 degrees. Toast slices of rye in toaster until dry. Crush, and reserve for later.
2. In a medium bowl, mix together the soup, milk, onion, corned beef, and mustard. Set aside.
3. Spread sauerkraut evenly in the bottom of a lightly greased 9x13 inch baking dish. Spread uncooked noodles over sauerkraut. Spoon soup mixture over noodles, and sprinkle with cheese. In a small bowl, mix melted butter with rye bread crumbs, and sprinkle that over the cheese.
4. Cover and bake for 50 minutes. Remove cover and bake for an additional 10 minutes.


Notes

You can adjust down the amount of corned beef, and/or sauerkraut,  if you wish.  My husband is a huge fan of cheese, so he usually adds more swiss!  This is an awesome recipe to serve on St. Pat's Day!

After making this I would increase this sauerkraut and less corned beef. It is really, really good...

SORRY FOLKS! 2 cans of cream of mushroom soup. I always use Campbell's! My apologies that that ingedient had inadvertently been omitted!

Your recipe calls for a soup but you have not listed the soup in the ingredients. Please let me know what soup or correct your recipe. I would love to make itl. Pat
