Ingredients

4 - skinless, boneless chicken breasts

1/2 packet - taco or fajita seasoning

1 cup - chunky mild salsa

1 cup - shredded taco cheese

1/2 cup - sour cream
Directions
Spray 9 x 13 baking dish with non-stick baking spray, place chicken breasts in dish. Sprinkle taco seasoning on each, top with salsa. Bake for 25-35 minutes or until juices run clear. Sprinkle with cheese and continue cooking until cheese is melted and bubbly. Top with dollop of sour cream, serve on bed of shredded lettuce.
Notes
I made this for my husband's boss and his wife, and they loved it. Served with fresh corn on the cob, cornbread, and Spanish rice.
