Sandy's super crowd pleasing lentil curry!

Ingredients
  • 2 TBSP - extra virgin olive oil
  • 1 - medium yellow onion
  • 3 - medium potatoes (I use russets)
  • 1 cup - dry green lentils
  • 2 large cans - crushed tomatoes (I use no salt added)
  • to taste - Garam Masala (I make my own, but you can buy it in the international section of your grocery store.)
  • 1 pint - plain yogurt or sour cream
  • 5 servings - rice (my favorites are Jasmine, Basmati, Black Japonica, and brown-use any rice you want!)
Directions

1)Coarsely chop the onion.

2)Wash the potatoes thoroughly, and cut into cubes (leave the skin on because it improves the texture)

3)In a large stock pot, heat the oil, and add the onion and stir until the onion becomes soft, but not brown. (you can add garlic as well)

4)toss in the lentils and stir until they are coated.

5)add the potatoes and the tomatoes and Garam Masala, bring to a boil.

6)Reduce heat to a simmer, and cover.  Stir occasionally and cook until the lentils and potatoes are soft (should take about half an hour). Adjust seasonings, and serve with yogurt and sour cream or rice.


Notes

This is a really inexpensive recipe to make.

I made this recipe once for a group of people who usually would cringe at vegetarian food, but they really loved it!

Also, this recipe never comes out the same twice.
