1 - 2 lbs - beef, lamb or pork
Directions
Begin layering all ingredients in a crockpot. Begin with meat (I usually buy churck roast and cut my own beef chunks.); add 1 regular size can peeled white potatoes, drained, or 4 large Irish potatoes, quartered but not peeled; 1 regular can green beans, drained; 1 regular can corn, drained; 1 large onion rough chopped; 2 cups celery rough chopped; 1 pepper (green, red or yellow) rough chopped (optional); 1 can or bottle of beer (cheap is ok); 2 - 3 cups of beef or veggie broth (put liquid only to bottom of top layer of veggies); 1 tbls. Worstershire sauce; 2 bay leaves; salt and pepper to taste (remember, canned veggies have lots of salt). Cook, over low heat, until ready to eat. Serve with Italian or French bread (for sopping), hearty red wine or a good beer. This smells wonderful when you come home after a long day in classes or at work - and it's ready to feed you and three to five other or leftovers for a couple of suppers for one.
