Shrimp Pesto Pasta

Ingredients
  • 1 pound - uncooked shrimp
  • 1 cup - grape tomatoes - sliced
  • 1 small can - sliced black olives
  • 1 pound - ditalini pasta (or any small pasta like elbow)
  • 1/2 cup - basil pesto sauce
  • 1/2 cup - mayo
  • 1 can - stems & pieces of mushrooms
  • garnish - parmesan cheese
  • little bit - olive oil
Directions

Peel, clean, and devein the shrimp.

Heat a little bit of olive oil in skillet and cook shrimp until pink and cooked through.

Boil and cook pasta according to package.

In a large bowl, put sliced tomatoes, drained olives, drained mushrooms and mix it all together with the basil pesto sauce and mayo.

Once pasta is done, rinse with cold water and mix together with veggie/pesto sauce.

Once shrimp is done, mix everything all together.

Sprinkle with parmesan cheese and serve with garlic toast.


Notes

I've made this so many times I remember it by heart.  Everytime I make it, the crowd goes wild!

I second the comment on Member's Mark pesto. It is very very good, and tastes just like fresh homemade pesto, but is actually cheaper than buying the raw ingredients.

This sounds wonderful and I can't wait to try it. I buy my pesto, also. Sam's Club has their Member's Mark Pesto and it is sooooo very good. Large jar for around $7.

Meagan, I tried this recipe last night, cutting it in half for two people. It made two generous servings. Both my husband and I loved this fast, easy and tasty recipe. I did however saute the mushrooms slightly before adding. Thanks for submitting it!

I don't make it, I buy it. I believe the brand is Basillico - but it is a basil pesto sauce. It's green. It is in the same aisle/location as the spaghetti sauces.
