Simon And Garfunkel Chicken
3 chicken breasts, boned, skinned and halved
salt and pepper
6 slices mozzarella
fresh bread crumbs
1/4 tsp. sage
1/4 tsp. thyme
1/2 c. butter
1 egg, beaten
2 T. parsley
1/4 tsp. rosemary
1/2 c. dry white wine
Flatten chicken between wax paper. Spread with 1/2 of the

each chicken breast. Roll up and fasten ends with toothpicks.
Coat lightly with flour. Dip in egg and roll in bread crumbs.
Arrange in baking dish. Melt remaining butter with seasonings.
Bake at 350° for 30 minutes, basting with butter mixture
occasionally. Pour wine over chicken and bake an additional 20
minutes, continue to baste. Serve over rice.
