Cream together shortening, 1.2 c. sugar and eggs. Sift in flour, cream of tartar, baking soda and salt. Cover dough with plastic wrap and chill until firm, at least 2 hours.
Pre-heat oven to 400 degrees. Combine 2 Tbs granulated sugar with cinnamon in a small bowl. Form chilled dough into balls the size of unshelled walnuts. Roll dough balls in sugar/cinnamon mixture to coat. Place 2" apart on ungreased cookie sheet. Bake 10 minutes.
Cookies will be very soft when removed from oven. Carefully remove to wire rack to cool. Store in air-tight container. (I'm told they will keep in the freezer 4-6 months, but they're always devoured well before then!)
