My crockpot usually only makes appearances during the fall and winter but.... anyone have some good summertime crockpot or soup recipes?  I love grilling in the summer but sometimes it is nice to come home from a busy day and know dinner is already done.

Nicole:  I don't own a Crock-Pot but your post about soup and summer reminded me of a couple of great soups that are served icy cold. . . vichysoisse, and gazpacho.   Both will do nicely for a summer evening supper.  The Old Man and I make our 'substantial' meal the one at mid-day, so supper at our house is a 'light' meal.

I just made a chicken cashew dish in the crockpot.  Delish and gone.
