Ingredients

1 box - 1 lb bow tie pasta (can use other small pasta)

1/4 cup - olive oil

1 1/2 cup - white vinegar

1 1/2 cup - sugar

1 tsp - salt
-
1/2 tsp - pepper
-
1 tsp - garlic powder
-
2 tsp - Dijon mustard prepared, (not dry)

4 oz - sliced or chopped pimento, drained

2 Tabsp - chopped parsley: I prefer fresh, but can use dry

1 bunch - green onion tops only (chopped finely)

1 medium - Cucumber: unpeeled, quartered and sliced or chopped
Directions
Boil and Drain Pasta
In a large bowl, coat pasta with oil
In a small bowl, combine remaining ingredients, then pour over pasta
cover and refrigerate 2 to 3 days before serving, stirring occasionally
Will keep for at least a week
Notes
It gets sweeter and better everyday.
