Taco Soup

  • 1/2 pound - ground round
  • 1/2 cup - minced onion
  • 1 package - taco seasoning
  • 1 package - dry ranch dressing mix
  • 1 can - black (ranch style) beans, drained
  • 1 can - red kidney beans, drained
  • 1 can - original or mild Rotel diced tomatoes
  • 1 can - shoe peg corn
  • 3 cans - water
  • 1/2 cup - brown or white instant rice
  • 1 6 oz can - tomato paste for those who like a richer tomato flavor
  • - tortilla chips, grated mozzerella cheese, ssour cream, optional

Brown beef and onions. Add taco seasoning and ranch dressing to browned meat.  Add beans, rotel tomatoes, corn, water and tomato paste. Bring to a low boil.  Simmer 20-30 minutes. Add minute rice and cook an additional 5 minutes.  Serve with chips, grated cheese, and sour cream, if desired.



A delicious and filling low fat meal.  One serving = 2 WW points.

Good recipe for a chilly or rainy day! I would cook long grain rice or brown rice,adding it to the recipe and not use minute rice Thanks for sharing
