Ingredients
  • 1 T - Chopped fresh oregano
  • 1 T - Extra-virgin olive oil
  • 2 T - Red wine vinegar
  • 1 - Garlic clove, minced
  • 2 C - Grape tomatoes, halved
  • ½ C - (2 ozs.) Crumbled reduced-feta cheese with basil and sundried tomatoes
  • 1 - Ripe peeled avocado, chopped

Tomato-Avocado Salsa (Salad)

  1. Combine first four ingredients in a large bowl, stirring.
  2. Add tomato halves, cheese, and avocado; toss gently.

 Yield: 4 servings (serving size ¾ C)

Notes:

  • General: The recipe says to serve immediately, but I happen to think it's better if it's made ahead and allowed to marinate in the dressing for a ½ an hour or so.
  • Salsa/Salad: The recipe is listed as salsa, but this makes a great side salad.
  • First four ingredients: Mix in small measuring cup and pour over vegetables and feta.
  • Add-in: Chopped onions! Red/purple or green. About 2-3 T.
