1 package | (16 oz.) red lentils |
8 cups | Water |
4 cups | Canned crushed tomatoes |
3 teaspoons | Cumin |
2 tablespoons | (or more) minced onion |
2 tablespoons | Lemon juice |
2 teaspoons | Minced garlic |
1 1/2 teaspoons | Salt (to taste) |
1 tablespoon | Vegetable oil or spray (optional) |
2 teaspoons | Black mustard seeds (optional) |
Wash lentils. Put in large pot with 6 cups of water. Cook, partially covered until tender (about 30 minutes.)
Add rest of water (2 cups) and mash up some of the lentils. Add tomatoes, cumin, onion, garlic, salt; bring to a boil.
Cook partially covered 10 minutes. Add lemon juice.
If desired, heat oil in skillet, add mustard seeds and cover. Cook a few minutes CAREFULLY--they BURN EASILY--and add to the lentil mixture.
These are SO good and lentils are so healthy for you. Great leftovers, too.
