Ingredients

1 package (16 oz.) red lentils
8 cups Water
4 cups Canned crushed tomatoes
3 teaspoons Cumin
2 tablespoons (or more) minced onion
2 tablespoons Lemon juice
2 teaspoons Minced garlic
1 1/2 teaspoons Salt (to taste)
1 tablespoon Vegetable oil or spray (optional)
2 teaspoons Black mustard seeds (optional)

Preparation

 

Wash lentils. Put in large pot with 6 cups of water. Cook, partially covered until tender (about 30 minutes.)

 

Add rest of water (2 cups) and mash up some of the lentils. Add tomatoes, cumin, onion, garlic, salt; bring to a boil.

 

Cook partially covered 10 minutes. Add lemon juice.

 

If desired, heat oil in skillet, add mustard seeds and cover. Cook a few minutes CAREFULLY--they BURN EASILY--and add to the lentil mixture.


Notes

These are SO good and lentils are so healthy for you.  Great leftovers, too.

I added some small diced carrots and used just a little less cumin. If you choose to reduce the water, you can even use it for a dip with pita or tortilla chips. This was so easy to make too. I am very glad this recipe was posted!!!
