Wacky Cake

Dish: Cakes
Dish Type: Chocolate
Cooking Method: Baked
Difficulty: 1 / 10
Servings: 24
Prep Time: 5 min
Cook Time: 45 min

Ingredients
  • 3 cups - all-purpose flour
  • 2 cups - granulated sugar
  • 2 tsp - baking soda
  • 1 tsp - salt
  • 3 Tbsp - cocoa powder, rounded
  • 1 tsp - vinegar (white or apple cider)
  • 2 tsp - vanilla extract
  • 2/3 cup - vegetable oil
  • 2 cups - cold water
Directions

Pre-heat oven to 350 degrees.  Blend together dry ingredients to make sure all lumps are broken up.  Add wet ingredients, whisk until blended.  Pour into ungreased 9"x13" baking pan.  Bake 45 min or until top springs back when lightly tapped. (Note:  center of cake will be significantly higher than edges - that's normal.) Cool in pan on rack.

Cake is nice & moist - we often serve without frosting.

Makes great cupcakes (bake about 12 min, check and continue until done) or sheet cake (bake about 20 min).

May substitute orange juice or other liquid for part or all of water for variation in flavor.  Top will be more flat when juice is used.

Serving idea:  Bake in sheet pan, cool & cut into 3" squares.  Spread softened ice cream about 1/2" thick on top of one slice, top with another slice to make an ice cream sandwich.  Wrap each separately in foil and freeze.
