3 eggs

1 c. oil

2 scant c. sugar

3 c. grated zucchini

1 t. vanilla

3 c. flour (Over the years I have started doing 1/2 reg. flour and 1/2 whole wheat. My Mom uses all whole wheat and says it's still good.)

½ T. salt (I don't put in the whole Tablespoon)

½ tsp. cinnamon

2 tsp. baking soda

6 oz. chocolate chips

8 oz. crushed, drained pineapple

½ c. chopped pecans, optional (I don't add nuts and don't put anything in its place)

cinnamon and sugar mixed together (ratio 1:1)

 

Mix this up in a very large bowl—it may be too much for your mixer bowl!

 

Beat eggs until frothy. Add oil, sugar, grated zucchini and vanilla. Blend; then add flour, salt, cinnamon, baking soda, chocolate chips and pineapple. If desired, add pecans. Fill papers 2/3 full, top with cinnamon and sugar mixture and 3 chocolate chips. Bake at 375 degrees for 20 minutes.


Notes

My Grandma made these, as well as my Mom and all of her daughters/daughters-in-law. My daughter started helping me make these when she was 3. She loves adding the 3 choc. chips on top of each. These freeze very well (I just put into Ziploc freezer bags). I just pull one out and microwave for 10 seconds. You would never know there's zucchini in these. Yum!
