The book description does not exaggerate. If you are serious about cooking, especially understanding the hows and whys, then this is an incomparable book. It is easy to read, easy to understand, and has lots of useful pictures and drawings. For example, the diagrams in the section on meats show how beef is cut in different countries and what each cut is called. This cookbook is very, very hard to find second-hand, so when you see it, buy it.
