Book introduction says: A COOKBOOK FOR DIABETICS is designed to serve as a ready reference to good food and well-balanced meals. Its pages contain a wide variety of dishes and menus for every occasion throughout the year - an interesting and attractive diet suitable not only for diabetics but for their families and guests.

I say: Being almost 40 years old, this is a classic cookbook. Prepared by a Deaconess of the United Lutheran Church of America who was a dietician and administrator for the American Diabetic Assoc. this book is STILL spot on. It works with the exchange list and lists many easily prepared, delicious recipes. It begins with chapters on the basics, very like todays diabetic basics, including sugar substitutes, calories, viatimins and minerals, and flavoring your food. Sampling of recipes: Spanish Omelet; Schoolgirl's Delight (a tasty salad with baked beans, fruit, celery); Candlelight Salad (wherein each person gets a banana candle with cherry flame); Lobster Genovese; Individual Meat Loaves; Onions and Peanuts; Risotto Alla Milanese; Cherry Orange Tart; Banana Punch. Then this book closes with a lot of suggestions for how to cook.
