The Sushi Economy is an intriguing look at how sushi arrives on plates all around the world. It's not so much about the taste of sushi, rather how it is a product of the forces behind globalization. Sasha Issenberg focuses mostly on tuna in chapters collected into parts that focus on the freight, food, fish, and future aspects of sushi. I enjoyed the behind-the-scenes look at Tokyo's Tsukiji wholesale market where tuna is auctioned as much as the chapters about how tuna is caught in New England and ranched in southern Australia. An interesting and very accessible read in culinary economics!
