Excellent resource for those who need to purchase beef, veal, pork or lamb for preparing foods for the public. I used this resource to teach students to write specifications for specific cuts. Students referred to copies to write their own specifications. Great for chefs and restaurant owners. By the way this is a 1992 edition rather than a 1980 edition.
