This is an outstanding survey and presentation of the best baking methods for bread I have ever seen. The "New Method Bread" is worth the price of admission - I have used the
"white" version for years, and the results are delicious. Every bread recipe is lovingly described and given in detail in the recipes. The chemistry of various ingredients are considered; the methods are discussed. You will be an expert when you use this baking book, by Floss and Stan Dworkin. And you will love the results. I know I did.
