"Those who have decided to explore ovo-lacto vegetarian eating (excluding meat, but not cheese and dairy), what we call "practical vegetarianism", should know how to prepare meals that they feel comfortable with both nutritionally and aesthetically. In Cooking What Comes Naturally I have developed a month's worth of nutritionally balanced dinners that have the virtues of using inexpensive whole ingredients and not meat, yet are nutritionally sound, very easy to prepare , and of course they taste good.
The trouble is that people generally don't know how to cook well without meat , especially over a long period of time. They become concerned with the adequacy of their diet, plus very often meals become repetitive, boring. Cooking What Comes Naturally represents the results of my desire to deal with these problems in David's and my diet."
