Gives good info about this noted cooking school's cuisine. Starts off with a very useful section on basics, techniques and cooking terms. closes with a listing of the nutritional value of the recipes. Here's a sampling of the recipes: Basic Bechamel Sauce; Four Onion Soup; Black Bean Sausage; Grilled Polynesian Shrimp with Fruit Kebabs; Braised Chicken Portuquese; Strawberry Sherbet in Chilled Chocolate Cups; Chocolate Mocha Inside/Out Cake.
