She is the author of the award-winning books Essential Eating The Digestible Diet, Essential Eating Sprouted Baking, Essential Eating A Cookbook and Essential Environments.
As an educator, organic chef, and an environmental consultant, she is a frequent speaker and a radio and television guest for her expertise in common-sense eating and non-toxic living. She is also an instructor for the Essential Eating Lifestyle & Cooking School.
As an advocate for sprouted whole grain flour, in 2008, she and her company developed a proprietary process for commercially milling organic sprouted whole grains into flour. Today, sprouted flour and baking mixes , sprouted pretzels and sprouted breads using the company's sprouted 100% whole wheat and sprouted 100% whole spelt flours are now available.
