Very good treatment of how tastes and eating habits have changed in the US. Combines sociology and history to show how and why Americans have broadened their tastes.

IMHO the name was the best part of the book! Granted it took a large amount of research, but who actually cares what the name of a chef at a certain eating place on a certain date?
